Ingredients

- 1 head of cabbage, chopped
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cloves of garlic, minced
- 6 cups vegetable or chicken broth
- 1 can diced tomatoes
- Salt and pepper to taste
- Optional: shredded chicken, ground beef, or sausage
Instructions
- In a large pot, sauté the onion, garlic, carrots, and celery until softened.
- Add the chopped cabbage and sauté for a few more minutes.
- Pour in the broth and add the diced tomatoes.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and let simmer for about 30 minutes.
- If using meat, add during the last 10 minutes of cooking.
- Serve hot.
