Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/2 pound sausage, sliced
  • 4 cups vegetable or chicken broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 bunch kale, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat until it shimmers.
  2. Add onion and garlic, sauté until softened, avoiding browning the garlic.
  3. Add the sausage and cook until browned.
  4. Pour in the broth and bring to a simmer, scraping up any browned bits.
  5. Stir in the white beans and kale, and season with oregano, salt, and pepper.
  6. Cook for about 15-20 minutes until the kale is tender.
  7. Taste and adjust salt before serving warm.
