Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until they’re soft and fragrant — about 3 to 4 minutes.
  2. Toss in the chopped carrots, celery, and diced potato. Stir everything together, cooking for about 5 minutes until the vegetables soften.
  3. Pour in the vegetable broth and let it reach a gentle boil.
  4. Reduce heat and simmer until the vegetables are tender, roughly 15 minutes.
  5. Stir in the heavy cream and mixed vegetables.
