Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until they’re soft and fragrant — about 3 to 4 minutes.
- Toss in the chopped carrots, celery, and diced potato. Stir everything together, cooking for about 5 minutes until the vegetables soften.
- Pour in the vegetable broth and let it reach a gentle boil.
- Reduce heat and simmer until the vegetables are tender, roughly 15 minutes.
- Stir in the heavy cream and mixed vegetables.
- Season with dried thyme, salt, and pepper, adjusting to taste.
- Let cook for an additional 5 to 10 minutes until heated through. Serve hot, garnished with fresh herbs and bread.
Notes
For a lighter version, you can substitute heavy cream with half-and-half or coconut milk.
