- 8 oz fettuccine or egg noodles
- 1 lb shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine or egg noodles according to package instructions. Drain and set aside. Drizzle a little olive oil onto the noodles to prevent sticking.
- Season the shrimp with Cajun seasoning, ensuring each piece is well-coated.
- Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until blackened and cooked through. Remove from skillet and set aside.
- In the same skillet, add the onions and mushrooms. Sauté until softened, about 5 minutes. Add the garlic and cook for another minute.
- Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and let it cook for a few minutes until slightly thickened.
- Add the cooked pasta and shrimp to the sauce. Toss to combine and heat through. Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
For creamier sauce, add a bit of cream cheese while simmering. Serve with garlic bread or a fresh green salad for a complete meal.
