Ingredients

- 1 bunch kale, chopped
- 1 can white beans, drained and rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 sausages, sliced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat 1 tablespoon of oil over medium-high and sauté the chopped onion and minced garlic until translucent and fragrant, about 3 minutes.
- Add the sliced sausage to the pot and cook until nicely browned, about 4 to 5 minutes, stirring occasionally.
- Stir in the chopped kale and cook until wilted, about 2 minutes.
- Add the drained and rinsed white beans and the can of diced tomatoes, stirring to combine.
- Pour in the chicken broth, then sprinkle in the Italian seasoning; season with salt and pepper to taste.
- Bring the pot to a gentle boil, then reduce heat and simmer for 20 minutes to let flavors meld.
- Taste and adjust seasoning before serving.
