- 2 cans butter beans, drained and rinsed
- 2 tablespoons olive oil
- 1 medium onion, chopped (about 1 cup)
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup fresh spinach, roughly chopped
- 1 teaspoon paprika (smoked or sweet)
- Salt and black pepper to taste (start with 1/2 teaspoon salt)
- 1 tablespoon lemon juice, freshly squeezed
- Optional: 1/4 cup grated Parmesan or a spoonful of plain yogurt for extra creaminess
Instructions
- Heat 2 tablespoons olive oil in a large pan over medium heat until shimmering.
- Add 1 medium chopped onion and 2 minced garlic cloves, sauté until softened, about 5 to 7 minutes.
- Stir in 2 cans of drained butter beans, 1 cup vegetable broth, 1 teaspoon paprika, and season with salt and pepper. Bring to a gentle simmer.
- Cook for 5 to 7 minutes, stirring occasionally, until beans absorb liquid and begin to break down.
- Add 1 cup fresh chopped spinach and stir until wilted, about 1 to 2 minutes.
- Remove from heat and stir in 1 tablespoon lemon juice and optional Parmesan or yogurt, adjust seasoning, and serve warm.
Notes
For added flavor, toast the paprika in the oil before adding onions. For a thicker sauce, mash some of the beans.
