Description

A comforting dish that combines tender butter beans and softened leeks into a creamy base.

Ingredients

Scale
  • 2 cups butter beans, cooked
  • 2 leeks, sliced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs, such as parsley or thyme, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced leeks and minced garlic, sautéing until softened, about 5 minutes.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the cooked butter beans and heavy cream, stirring to combine.
  5. Allow to simmer for 10 to 15 minutes, until the sauce thickens slightly.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with fresh herbs.

Notes

Use well-washed leeks to avoid grit. Stir occasionally while simmering for the creamiest result. Add a splash of lemon juice before serving for brightness.
