Description

A flavorful and comforting dish featuring Cajun-spiced chicken served over creamy rice, perfect for weeknight dinners.


Ingredients

  • 2 chicken breasts, skinless and boneless
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Season the chicken breasts with Cajun seasoning evenly.
  2. In a skillet, heat olive oil over medium heat and cook the chicken for 7-8 minutes per side until cooked through. Remove and let rest before slicing.
  3. Add rice and chicken broth to the same skillet, bring to a boil, then reduce heat, cover, and cook until rice is tender (15-20 minutes).
  4. In a separate pot, heat heavy cream, then stir in Parmesan cheese until melted and creamy.
  5. Serve the rice topped with sliced Cajun chicken and creamy Parmesan sauce, garnished with chopped parsley.

Notes

For extra crunch, serve with a side salad or cornbread. Store leftovers in an airtight container for up to 3 days in the fridge or up to 3 months in the freezer.
