- 2 chicken breasts, skinless and boneless
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Season the chicken breasts with Cajun seasoning evenly.
- In a skillet, heat olive oil over medium heat and cook the chicken for 7-8 minutes per side until cooked through. Remove and let rest before slicing.
- Add rice and chicken broth to the same skillet, bring to a boil, then reduce heat, cover, and cook until rice is tender (15-20 minutes).
- In a separate pot, heat heavy cream, then stir in Parmesan cheese until melted and creamy.
- Serve the rice topped with sliced Cajun chicken and creamy Parmesan sauce, garnished with chopped parsley.
Notes
For extra crunch, serve with a side salad or cornbread. Store leftovers in an airtight container for up to 3 days in the fridge or up to 3 months in the freezer.
