Description

A comforting and creamy Chicken Fettuccine Alfredo that brings the family together in just 30 minutes.


Ingredients

  • 2 large boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • Flour (for dredging)
  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 8 ounces uncooked fettuccine
  • 4 ounces cream cheese (softened)
  • 1 cup heavy/whipping cream
  • 1/4 cup chicken broth
  • 2 large cloves garlic (minced)
  • 1 cup freshly grated parmesan cheese

Instructions

  1. Start by softening the cream cheese; take it out of the fridge at least 30 minutes before beginning the recipe.
  2. Bring a large pot of salted water to a rolling boil for the fettuccine. Cook according to package directions until al dente.
  3. Slice the chicken breasts in half lengthwise, creating four thin cutlets. Season with garlic powder, salt, and pepper, and coat with flour.
  4. Heat a deep skillet over medium-high heat, add olive oil and 1 tablespoon of butter. Cook the chicken for about 5 minutes per side until golden and cooked through, then set aside.
  5. Wipe out the skillet and add the remaining butter, cream cheese, heavy cream, chicken broth, and minced garlic. Stir until the sauce is smooth.
  6. Allow the sauce to bubble for about 5 minutes until slightly reduced. Slice the chicken into bite-size pieces.
  7. Stir in the grated parmesan cheese and let the sauce thicken. Adjust seasoning as needed.
  8. Drain the fettuccine, toss it into the skillet with the sauce, and mix until coated. Serve with sliced chicken on top or mixed together, garnished with extra parmesan cheese.

Notes

Serve with a side salad or garlic bread for a complete meal. Store leftovers in the refrigerator for up to three days.
