- 1 pound ground beef (80/20 blend)
- 1 package (16 oz) potato gnocchi
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes, drained
- 3/4 cup heavy cream
- 1/2 cup beef broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon tomato paste
Instructions
- 1. Heat olive oil in a large skillet over medium-high heat. Add onion and bell pepper, cook 4-5 minutes until softened.
- 2. Add garlic and cook 30 seconds until fragrant.
- 3. Add ground beef, breaking it up with a spoon. Cook 6-8 minutes until browned.
- 4. Stir in tomato paste and cook 1 minute.
- 5. Add diced tomatoes, Italian seasoning, paprika, garlic powder, salt, and pepper. Simmer 3-4 minutes.
- 6. Pour in beef broth and bring to a gentle simmer.
- 7. Add gnocchi, stirring gently to coat. Cook 2-3 minutes.
- 8. Reduce heat to medium-low and slowly add heavy cream, stirring constantly.
- 9. Add Parmesan cheese and stir until melted.
- 10. Continue cooking 3-5 minutes until gnocchi are heated through and sauce thickens.
- 11. Remove from heat and garnish with fresh parsley.
Notes
Store leftovers in refrigerator for up to 3-4 days. Reheat gently on stovetop with a splash of broth if needed.
