Description

A hearty weeknight dinner featuring tender potato gnocchi in a rich, creamy sauce with perfectly seasoned ground beef and vegetables.


Ingredients

  • 1 pound ground beef (80/20 blend)
  • 1 package (16 oz) potato gnocchi
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 3/4 cup heavy cream
  • 1/2 cup beef broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon tomato paste

Instructions

  1. 1. Heat olive oil in a large skillet over medium-high heat. Add onion and bell pepper, cook 4-5 minutes until softened.
  2. 2. Add garlic and cook 30 seconds until fragrant.
  3. 3. Add ground beef, breaking it up with a spoon. Cook 6-8 minutes until browned.
  4. 4. Stir in tomato paste and cook 1 minute.
  5. 5. Add diced tomatoes, Italian seasoning, paprika, garlic powder, salt, and pepper. Simmer 3-4 minutes.
  6. 6. Pour in beef broth and bring to a gentle simmer.
  7. 7. Add gnocchi, stirring gently to coat. Cook 2-3 minutes.
  8. 8. Reduce heat to medium-low and slowly add heavy cream, stirring constantly.
  9. 9. Add Parmesan cheese and stir until melted.
  10. 10. Continue cooking 3-5 minutes until gnocchi are heated through and sauce thickens.
  11. 11. Remove from heat and garnish with fresh parsley.

Notes

Store leftovers in refrigerator for up to 3-4 days. Reheat gently on stovetop with a splash of broth if needed.
