- 1 teaspoon dried basil
- ½ teaspoon dried parsley
- ½ teaspoon dried oregano
- ½ teaspoon mustard powder
- ¼ teaspoon pepper
- 1 lb. ground Italian sausage (hot or mild)
- 2 tablespoons butter
- 1 yellow onion (diced)
- ½ cup diced carrots
- 2 ribs celery (diced)
- 3 cloves garlic (minced)
- 3 tablespoons flour
- 1 teaspoon soy sauce
- 1 teaspoon hot sauce
- 5 cups chicken broth
- 1 cup heavy cream
- 1 ¼ lbs. red potatoes (about 6 small potatoes)
- 2 cups shredded cheddar cheese (optional)
Instructions
- In a large pot, brown the ground Italian sausage over medium heat until fully cooked, breaking it apart as it cooks.
- Once browned, add butter, diced onion, carrots, and celery. Cook until the vegetables are tender, around 5-7 minutes.
- Stir in garlic, dried basil, parsley, oregano, mustard powder, and pepper, letting the spices toast for about a minute.
- Sprinkle in flour and stir to coat all the ingredients, cooking for another minute for a thicker base.
- Gradually pour in the chicken broth, while whisking to combine. Add soy sauce and hot sauce for that kick.
- Once the broth is bubbling, toss in the diced red potatoes. Reduce the heat and let it simmer for about 15-20 minutes until the potatoes are tender.
- Stir in the heavy cream and let it warm through for a few minutes. If using, sprinkle in the shredded cheddar cheese just before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half or a non-dairy alternative. You can also customize the vegetables as desired.
