Description

A delightful mix of creamy potatoes, savory sausage, and wholesome veggies, perfect for a warming family meal.


Ingredients

  • 1 teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon mustard powder
  • ¼ teaspoon pepper
  • 1 lb. ground Italian sausage (hot or mild)
  • 2 tablespoons butter
  • 1 yellow onion (diced)
  • ½ cup diced carrots
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 3 tablespoons flour
  • 1 teaspoon soy sauce
  • 1 teaspoon hot sauce
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 ¼ lbs. red potatoes (about 6 small potatoes)
  • 2 cups shredded cheddar cheese (optional)

Instructions

  1. In a large pot, brown the ground Italian sausage over medium heat until fully cooked, breaking it apart as it cooks.
  2. Once browned, add butter, diced onion, carrots, and celery. Cook until the vegetables are tender, around 5-7 minutes.
  3. Stir in garlic, dried basil, parsley, oregano, mustard powder, and pepper, letting the spices toast for about a minute.
  4. Sprinkle in flour and stir to coat all the ingredients, cooking for another minute for a thicker base.
  5. Gradually pour in the chicken broth, while whisking to combine. Add soy sauce and hot sauce for that kick.
  6. Once the broth is bubbling, toss in the diced red potatoes. Reduce the heat and let it simmer for about 15-20 minutes until the potatoes are tender.
  7. Stir in the heavy cream and let it warm through for a few minutes. If using, sprinkle in the shredded cheddar cheese just before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half or a non-dairy alternative. You can also customize the vegetables as desired.
