Ingredients

  • 8 oz Elbow Macaroni
  • 1 lb Ground Beef
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 can Diced Tomatoes with Green Chilies (Rotel)
  • 8 oz Cream Cheese
  • 1 cup Beef Broth
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. Cook the elbow macaroni according to package directions until al dente, season the cooking water lightly with the salt.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.
  3. Add the ground beef, garlic powder, onion powder, salt, and pepper, breaking the beef up and cooking until nicely browned.
  4. Pour in the diced tomatoes with green chilies and beef broth, stir to loosen browned bits, and bring to a gentle simmer.
  5. Lower the heat to medium-low, cut the cream cheese into chunks and add to the skillet, stirring until it melts and the sauce becomes smooth.
  6. Drain the pasta and add it to the skillet, sprinkle the shredded cheddar over the top, then stir until the cheese melts.
  7. Taste and adjust salt and pepper if needed, then serve hot.
