A simple and satisfying one-pot vegan stew made with cherry tomatoes and white beans, perfect for a quick dinner.
Ingredients

- 1 can white beans, drained and rinsed
- 2 cups cherry tomatoes, halved
- 2 cups vegetable broth
- 1 cup spinach or kale, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- Herbs (such as basil or thyme) for garnish
Instructions
- Heat olive oil in a pot over medium heat and sauté the onion until translucent.
- Add garlic and cook for another minute until fragrant.
- Stir in cherry tomatoes and cook until they soften and release juices.
- Add white beans and vegetable broth, bring to a simmer.
- Stir in the greens and cook until wilted.
- Season with salt, pepper, and herbs, taste and adjust.
- Serve hot, spooning the stew into bowls.
Notes
Serve with crusty bread or over cooked grains for a heartier meal. Revive aromatic notes by adding fresh herbs just before serving.
