Deliciously crispy on the outside and soft on the inside, these Mashed Potato Croquettes turn leftover mashed potatoes into a comforting dish perfect for weeknight dinners.

- 2 cups leftover mashed potatoes
- 1/2 cup all-purpose flour
- 1 large egg, lightly beaten
- 1/2 cup breadcrumbs (Panko recommended)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Vegetable oil, for frying
Instructions
- Place the mashed potatoes in a bowl. If too wet, fold in 1 to 2 tablespoons of flour.
- In a shallow dish, add the flour and shake off excess.
- In another dish, pour beaten egg and ensure it’s frothy.
- In a third dish, combine breadcrumbs, salt, and pepper.
- Shape about 2 tablespoons of mashed potato mixture into logs or balls.
- Dredge each shape in flour, then dip in egg, and finally roll in breadcrumbs.
- Chill the coated croquettes in the fridge for 10 minutes.
- Heat 1 inch of vegetable oil to 350°F (175°C).
- Fry croquettes in batches for 2-3 minutes on each side until golden brown.
- Remove with a slotted spoon and drain on a wire rack lined with paper towels.
- Serve immediately with a squeeze of lemon or a tangy dip.
Notes
For extra crunch, consider double-coating croquettes with egg and breadcrumbs.
