Description

Golden and crunchy Parmesan crusted baby potatoes that are tender on the inside, perfect as a side or simple main.


Ingredients

  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and warm your baking sheet.
  2. Wash and halve the baby potatoes, leaving the skin on.
  3. Toss halved potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Sprinkle the grated Parmesan cheese over the potatoes and press lightly.
  6. Bake for 25-30 minutes or until golden brown and crispy.
  7. Garnish with fresh parsley if desired and serve immediately.

Notes

For extra crunch, toss in a tablespoon of panko with the Parmesan. Wait to sprinkle any extra Parmesan until serving to avoid a gummy crust.
