Description

Delightfully crispy roasted potatoes infused with garlic, olive oil, and Mediterranean flavors, perfect for any meal.


Ingredients

  • 3 pounds baby potatoes
  • 6 garlic cloves, peeled and minced
  • 4 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
  • 1 lemon, sliced
  • 3/4 cup Kalamata olives, pitted
  • 1/3 cup feta cheese

Instructions

  1. Cut the potatoes in half, keeping all pieces about the same size for even cooking.
  2. Preheat the oven to 400°F (200°C) and line a sheet pan with aluminum foil or parchment paper.
  3. In a bowl, combine potatoes, garlic, olive oil, lemon juice, oregano, salt, and pepper. Toss to coat.
  4. Add lemon slices and gently toss again.
  5. Transfer potatoes to the sheet pan, spreading them into an even layer.
  6. Bake for 25 minutes, then flip the potatoes, adding Kalamata olives, and bake for another 15 minutes until tender and golden brown.
  7. Remove from the oven and toss with half of the feta cheese.
  8. Garnish with the remaining feta cheese and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
