- 3 pounds baby potatoes
- 6 garlic cloves, peeled and minced
- 4 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1/4 teaspoon ground black pepper
- 1 lemon, sliced
- 3/4 cup Kalamata olives, pitted
- 1/3 cup feta cheese
Instructions
- Cut the potatoes in half, keeping all pieces about the same size for even cooking.
- Preheat the oven to 400°F (200°C) and line a sheet pan with aluminum foil or parchment paper.
- In a bowl, combine potatoes, garlic, olive oil, lemon juice, oregano, salt, and pepper. Toss to coat.
- Add lemon slices and gently toss again.
- Transfer potatoes to the sheet pan, spreading them into an even layer.
- Bake for 25 minutes, then flip the potatoes, adding Kalamata olives, and bake for another 15 minutes until tender and golden brown.
- Remove from the oven and toss with half of the feta cheese.
- Garnish with the remaining feta cheese and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
