Description

Delicious and nutritious muffins packed with protein and fresh blueberries, perfect for any time of day.


Ingredients

  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder

Instructions

  1. Preheat oven to 360°F (180°C).
  2. In a large mixing bowl, whisk together the egg, honey, Greek yogurt, vanilla extract, and olive oil until smooth.
  3. Add the plain flour, vanilla-flavored protein powder, baking powder, and baking soda. Stir gently until just combined.
  4. Fold in the blueberries carefully to avoid crushing them.
  5. Spoon the batter into a lined muffin pan, dividing evenly to make 12 muffins.
  6. Bake for 15-20 minutes, or until a toothpick comes out clean.
  7. Allow muffins to cool in the pan for a few minutes before transferring to a wire rack or serving plate.

Notes

For extra moist muffins, slightly reduce baking time or add an extra tablespoon of Greek yogurt. You can freeze them for up to three months for later enjoyment.
