Description

A healthy, hearty chicken soup featuring shredded chicken, black beans, corn, and tomatoes for a fresh and bright flavor.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Sauté onions and garlic until translucent.
  2. Add the shredded chicken, black beans, corn, diced tomatoes, and chicken broth; stir to combine.
  3. Stir in the cumin, chili powder, salt, and pepper; watch the spices bloom.
  4. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  5. Stir in lime juice before serving.
  6. Garnish with fresh cilantro.
