  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can fire-roasted diced tomatoes, undrained
  • 6 cups low-sodium chicken broth
  • 1 cup corn, fresh or frozen
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper (or more, to taste)
  • Salt and freshly ground black pepper, to taste
  • Juice of ½ lime
  • Optional garnishes: fresh cilantro, avocado slices, plain Greek yogurt or sour cream, crushed tortilla chips

Instructions

  1. 1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  2. 2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add garlic and bell peppers, cook for 5-7 minutes more. Stir in cumin, chili powder, oregano, and cayenne; cook for 1 minute until fragrant.
  3. 3. Pour in diced tomatoes and chicken broth. Scrape the bottom of the pot to loosen browned bits. Add rinsed black beans.
  4. 4. Return browned chicken to the pot. Bring to a boil, then reduce heat, cover, and simmer for at least 20 minutes, or up to 30-40 minutes.
  5. 5. Stir in corn and cook for 5 minutes until heated through. Season with salt and pepper to taste.
  6. 6. Stir in fresh lime juice just before serving. Ladle into bowls and garnish as desired.

Notes

Store cooled soup in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze in freezer-safe containers for up to 3 months. Reheat on the stovetop or in the microwave.
