- 1/4 cup Dijon mustard
- 1 tablespoon lemon juice

- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together Dijon mustard, parsley, lemon juice, olive oil, garlic, salt, and pepper in a small bowl until well emulsified.
- Place the salmon on a parchment-lined baking tray and coat the top of the salmon generously with the mustard mixture.
- Bake the salmon for 18 to 20 minutes, depending on thickness, or until it reaches an internal temperature of 125 to 130°F for medium-rare.
- Let the salmon rest for 2 minutes before slicing and serving.
