Ingredients

- 1 cup chickpeas, canned or cooked
- 2 large eggs
- 1/4 cup sun-dried tomatoes, chopped
- Salt, to taste
- Pepper, to taste
- Oil (olive or cooking oil), for sautéing
Instructions
- In a skillet, heat a little oil over medium heat.
- Add drained chickpeas and sauté for a couple of minutes until heated through.
- Stir in chopped sun-dried tomatoes and season with salt and pepper.
- Create a small well in the chickpeas and crack an egg into the well.
- Cover the skillet and cook until the egg is set to your liking.
- Serve immediately.
Notes
