- 1 egg
- 2 slices of bread (whole grain, sourdough, or gluten-free)
- 1/2 avocado (ripe)
- 1/2 cup cottage cheese (low-fat or regular)
- 1/8 teaspoon paprika (optional)
- 1/8 teaspoon salt (optional)
- 1/8 teaspoon black pepper (optional)
- 1 teaspoon Dijon mustard (optional)
- 1 tablespoon sliced green onion (optional)
- Everything but the bagel seasoning (to taste)
- 1 tablespoon hemp seeds (optional)
Instructions
- Hard boil your egg: Place the egg in a medium pot and cover with cold water. Bring to a boil, cover, and remove from heat. Let sit for 9-12 minutes, then transfer to ice water, cool, and peel.
- Toast your bread until golden brown.
- In a medium bowl, combine avocado, cottage cheese, and the peeled hard-boiled egg. Mash until smooth.
- Season the mixture with paprika, salt, black pepper, Dijon mustard, and green onion. Mix well.
- Spread the mixture evenly on the toasted bread slices. Top with everything but the bagel seasoning and hemp seeds as desired. Enjoy!
Notes
For a creamier texture, choose full-fat cottage cheese. You can also add diced bell peppers or cherry tomatoes for extra texture.
