Description

A delightful and nutritious breakfast featuring creamy avocado and protein-packed cottage cheese on toasted bread.


Ingredients

  • 1 egg
  • 2 slices of bread (whole grain, sourdough, or gluten-free)
  • 1/2 avocado (ripe)
  • 1/2 cup cottage cheese (low-fat or regular)
  • 1/8 teaspoon paprika (optional)
  • 1/8 teaspoon salt (optional)
  • 1/8 teaspoon black pepper (optional)
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon sliced green onion (optional)
  • Everything but the bagel seasoning (to taste)
  • 1 tablespoon hemp seeds (optional)

Instructions

  1. Hard boil your egg: Place the egg in a medium pot and cover with cold water. Bring to a boil, cover, and remove from heat. Let sit for 9-12 minutes, then transfer to ice water, cool, and peel.
  2. Toast your bread until golden brown.
  3. In a medium bowl, combine avocado, cottage cheese, and the peeled hard-boiled egg. Mash until smooth.
  4. Season the mixture with paprika, salt, black pepper, Dijon mustard, and green onion. Mix well.
  5. Spread the mixture evenly on the toasted bread slices. Top with everything but the bagel seasoning and hemp seeds as desired. Enjoy!

Notes

For a creamier texture, choose full-fat cottage cheese. You can also add diced bell peppers or cherry tomatoes for extra texture.
