Description

Crispy, golden potato slices that are perfectly seasoned and baked until tender inside with beautifully caramelized edges.


Ingredients

  • 3 large russet potatoes (about 2.5 pounds)
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 2 tablespoons fresh chopped chives (optional)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. 1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. 2. Wash and scrub potatoes thoroughly, then pat completely dry with paper towels.
  3. 3. Cut each potato into rounds about 1/2 inch thick, keeping slices uniform.
  4. 4. Place potato slices in a large mixing bowl and drizzle with olive oil, tossing to coat evenly.
  5. 5. Combine salt, pepper, garlic powder, paprika, and onion powder in a small bowl, then sprinkle over potato slices and toss.
  6. 6. Arrange seasoned potato slices in a single layer on prepared baking sheet without overlapping.
  7. 7. Bake for 25-30 minutes, flipping each slice once halfway through cooking time.
  8. 8. Remove from oven and immediately sprinkle with fresh chives and Parmesan cheese if using.

Notes

Store leftovers in refrigerator for up to 4 days. Reheat in 400°F oven for 8-10 minutes to restore crispiness. Avoid microwaving as it makes slices soggy.
