- 3 large russet potatoes (about 2.5 pounds)
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon onion powder
- 2 tablespoons fresh chopped chives (optional)
- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- 1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- 2. Wash and scrub potatoes thoroughly, then pat completely dry with paper towels.
- 3. Cut each potato into rounds about 1/2 inch thick, keeping slices uniform.
- 4. Place potato slices in a large mixing bowl and drizzle with olive oil, tossing to coat evenly.
- 5. Combine salt, pepper, garlic powder, paprika, and onion powder in a small bowl, then sprinkle over potato slices and toss.
- 6. Arrange seasoned potato slices in a single layer on prepared baking sheet without overlapping.
- 7. Bake for 25-30 minutes, flipping each slice once halfway through cooking time.
- 8. Remove from oven and immediately sprinkle with fresh chives and Parmesan cheese if using.
Notes
Store leftovers in refrigerator for up to 4 days. Reheat in 400°F oven for 8-10 minutes to restore crispiness. Avoid microwaving as it makes slices soggy.
