- 1 packet (1 oz) ranch dressing mix
- 1/2 cup all-purpose flour
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- Cooking spray or additional olive oil
Instructions
- 1. Preheat oven to 425°F. Line baking sheet with parchment paper.
- 2. Pat chicken breasts dry and season with salt, pepper, and olive oil.
- 3. Set up three coating stations: seasoned flour in first dish, beaten eggs in second, breadcrumb mixture in third.
- 4. Dredge each chicken breast in flour, then eggs, then breadcrumb mixture, pressing to adhere.
- 5. Place on prepared baking sheet, leaving space between pieces.
- 6. Spray tops with cooking spray and bake 20-25 minutes until internal temperature reaches 165°F.
- 7. Rest 5 minutes before serving.
