Description

A hearty layered casserole with seasoned ground beef, tender egg noodles, and a rich cream cheese mixture, all topped with melted cheddar and mozzarella.


Ingredients

  • 1 pound lean ground beef
  • 8 ounces wide egg noodles
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1 (8-ounce) can tomato sauce
  • 1 tablespoon tomato paste
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1/2 teaspoon paprika
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 3 green onions, chopped
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. 1. Preheat oven to 350°F. Grease a 9×13-inch baking dish. Cook noodles until al dente, drain, and toss with butter.
  2. 2. Heat olive oil in a large skillet. Cook onion until softened, add garlic and cook 30 seconds.
  3. 3. Add ground beef and cook until browned. Drain fat if needed.
  4. 4. Stir in tomato paste, cook 1 minute. Add diced tomatoes, tomato sauce, Italian seasoning, 1/2 tsp salt, 1/4 tsp pepper, and paprika. Simmer 8-10 minutes.
  5. 5. Mix cream cheese, sour cream, cottage cheese, green onions, remaining salt and pepper until smooth.
  6. 6. Layer half the noodles in baking dish, top with half the beef mixture, then all the cream cheese mixture.
  7. 7. Add remaining noodles, remaining beef mixture, then 1 cup cheddar and all mozzarella.
  8. 8. Cover with foil and bake 35 minutes. Remove foil, add remaining cheddar, bake 10-15 minutes more.
  9. 9. Let rest 10-15 minutes before serving.

Notes

Can be assembled ahead and refrigerated overnight. Add 10-15 minutes to baking time if cooking from cold.
