Description

A crowd-pleasing salad combining seasoned ground beef, fresh vegetables, and crunchy Doritos with a creamy taco-inspired dressing.


Ingredients

  • 1 large bag (9.25 oz) Nacho Cheese Doritos, crushed
  • 1 pound ground beef (80/20 blend)
  • 1 packet (1 oz) taco seasoning
  • 2/3 cup water
  • 1 large head iceberg lettuce, chopped
  • 2 medium tomatoes, diced
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup red onion, finely diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup salsa (medium heat)
  • 2 tablespoons lime juice, freshly squeezed
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. 1. Cook ground beef in a large skillet over medium-high heat until browned, 6-8 minutes. Drain excess fat.
  2. 2. Add taco seasoning and water to beef. Simmer 3-4 minutes until liquid reduces. Cool for 10 minutes.
  3. 3. Whisk together sour cream, mayonnaise, salsa, lime juice, cumin, and garlic powder for dressing. Season with salt and pepper.
  4. 4. Layer chopped lettuce in a large serving bowl.
  5. 5. Add cooled seasoned beef over lettuce.
  6. 6. Layer tomatoes, cheddar cheese, red onion, black beans, and corn.
  7. 7. Drizzle with dressing.
  8. 8. Just before serving, crush Doritos into bite-sized pieces and sprinkle on top.
  9. 9. Garnish with fresh cilantro and serve immediately.

Notes

Keep Doritos separate until serving to maintain crunch. Store components separately for up to 3 days.
