Ingredients

  • 2 celery stalks, finely chopped

  • Salt and freshly ground black pepper to taste
  • 8 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken (rotisserie chicken works wonderfully here)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. 1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 8-10 minutes.
  2. 2. Add the minced garlic, Italian seasoning, and thyme to the pot. Cook for another minute until fragrant, being careful not to burn the garlic. Stir in salt and pepper to your liking.
  3. 3. Pour in the chicken broth. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for at least 15 minutes to allow the flavors to meld.
  4. 4. Stir in the shredded cooked chicken. Continue to simmer for another 5 minutes until the chicken is heated through.
  5. 5. Reduce the heat to low. Slowly whisk in the heavy cream and grated Parmesan cheese until the cheese is melted and the soup is creamy. Do not boil.
  6. 6. Taste and adjust seasoning with salt and pepper if necessary.
  7. 7. Ladle the soup into bowls. Garnish with fresh chopped parsley and extra grated Parmesan cheese.

Notes

Store cooled soup in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low to medium-low heat, stirring frequently. Avoid boiling. For freezing, consider adding cream and Parmesan after reheating the base.
