Description

A quick and flavorful dish that combines juicy chicken thighs with sweet BBQ and honey, served over tender rice.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In a bowl, mix BBQ sauce, honey, and minced garlic.
  4. In the same pan, toast the uncooked rice for 1–2 minutes, then add chicken broth and half the sauce.
  5. Return chicken to the pan, pour the remaining sauce over, and cover.
  6. Simmer on low heat for 15 minutes.
  7. Add mixed vegetables and cook, covered, for 5 more minutes or until rice is tender and chicken is cooked through.
  8. Let sit for 5 minutes, garnish with green onions, and serve hot.

Notes

Marinating chicken in sauce for a few hours enhances flavor. Choose low-sodium broth for controlled seasoning.
