Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup fresh broccoli, chopped
  • 1 cup bell peppers, diced
  • 1 cup cauliflower rice
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese
  • 1/2 cup chicken broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the shredded chicken until it’s heated through and slightly crispy on the edges.
  3. Add in the chopped broccoli and diced bell peppers, sautéing for an additional 3-4 minutes until just tender.
  4. Stir in the cauliflower rice, cream cheese, chicken broth, and Italian seasoning, combining until creamy and heated through.
  5. Transfer the mixture into a greased baking dish and spread it out evenly.
  6. Sprinkle the mozzarella cheese generously on top.
  7. Bake in the oven for about 25-30 minutes, or until the cheese is melted and golden brown.
