- 1 cup bell peppers, diced
- 1 cup cauliflower rice
- 1 cup shredded mozzarella cheese
- 1/2 cup cream cheese
- 1/2 cup chicken broth
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, sauté the shredded chicken until it’s heated through and slightly crispy on the edges.
- Add in the chopped broccoli and diced bell peppers, sautéing for an additional 3-4 minutes until just tender.
- Stir in the cauliflower rice, cream cheese, chicken broth, and Italian seasoning, combining until creamy and heated through.
- Transfer the mixture into a greased baking dish and spread it out evenly.
- Sprinkle the mozzarella cheese generously on top.
- Bake in the oven for about 25-30 minutes, or until the cheese is melted and golden brown.
