Description

Quick and nutritious red lentil flatbreads that are gluten-free and versatile, perfect for pairing with a variety of dishes.


Ingredients

Scale
  • 1 cup red lentils
  • 1 1/2 cups water
  • 1 tsp curry powder
  • 1/4 tsp salt

Instructions

  1. Mix all the ingredients in a bowl or blender.
  2. Leave to soak for 1 hour.
  3. Blend the mixture until you have a thick batter.
  4. Heat a non-stick frying pan with a small amount of oil.
  5. Spoon 2-3 tablespoons of batter into the pan for each flatbread.
  6. Cook for 1-2 minutes until bubbles form, then flip and cook for another 1-2 minutes.
  7. Repeat until all flatbreads are cooked and keep warm on a plate.

Notes

Serve warm with curries or as wraps. Store leftovers in a sealed container.
