Instructions
- Add the chicken, chicken broth, coconut milk, red curry paste, fish sauce, diced onion, minced garlic, and sliced red bell pepper to the Crockpot.
- Mix everything well to distribute the flavors.
- Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fully cooked.
- Remove the chicken and shred it, then return the chicken to the soup.
- Stir in the lime juice, and serve garnished with fresh cilantro.
Notes
For a bolder flavor, let the soup steep for an extra hour before serving. For an extra kick, add sliced jalapeños or chili flakes.
