Description

Ingredients

  • 4 cups cold, cooked rice
  • 3 tablespoons butter
  • 1 onion, diced
  • 12 oz frozen peas and carrots
  • 1/2 cup soy sauce
  • 3 eggs, beaten

Instructions

  1. Heat the butter in a large skillet over medium heat until melted. Add diced onions and cook until translucent.
  2. Add frozen peas and carrots to the pan and stir until heated through.
  3. Incorporate the cold, cooked rice into the skillet along with soy sauce, stirring gently to coat.
  4. Push the rice to one side and pour beaten eggs into the space. Scramble and mix into the rice.
  5. Serve hot, garnished with sliced green onions or sesame seeds if desired.

Notes

For extra crunch, use day-old rice. Customize with any veggies on hand.
