Instructions
- Heat the butter in a large skillet over medium heat until melted. Add diced onions and cook until translucent.
- Add frozen peas and carrots to the pan and stir until heated through.
- Incorporate the cold, cooked rice into the skillet along with soy sauce, stirring gently to coat.
- Push the rice to one side and pour beaten eggs into the space. Scramble and mix into the rice.
