Description

A quick and indulgent dish featuring flaky salmon seared to perfection in garlic butter, perfect for any weeknight dinner.


Ingredients

Scale
  • 4 skinless and boneless salmon fillets (180g/6oz each)
  • 1/2 tsp salt (cooking/kosher)
  • 1/4 tsp black pepper
  • 1 1/2 tbsp olive oil
  • 1 tbsp garlic (about 2 cloves, finely minced)
  • 90g / 6 tbsp salted butter (cut into cubes)
  • 1 tsp lemon juice (plus more to taste)
  • 2 tsp parsley (finely chopped)

Instructions

  1. Take the salmon out of the fridge about 30 minutes before cooking.
  2. Sprinkle both sides of the salmon with salt and pepper.
  3. Heat olive oil in a large nonstick skillet over medium-high heat and add the salmon, presentation side down.
  4. Cook for about 3 minutes until golden and slightly crispy.
  5. Gently turn the salmon and cook on the other side for 1 minute, then add the butter.
  6. Once the butter has melted, add minced garlic and baste the salmon with the bubbling butter for 1.5 minutes.
  7. Check the internal temperature of the salmon (should reach about 50°C/122°F for medium-rare).
  8. Allow the salmon to rest for 3 minutes.
  9. Add lemon juice to the butter in the pan while the salmon rests.
  10. Serve the salmon with the garlic butter drizzled on top and sprinkle with parsley.

Notes

For extra flavor, consider adding a pinch of cayenne pepper or substituting with different herbs like dill.
