- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup onion, finely chopped
- 1 egg
- 1/4 cup milk
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup ketchup (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, finely chopped onion, egg, milk, Italian seasoning, and a generous sprinkle of salt and pepper. Use your hands to mix everything together.
- Shape the mixture into a loaf and place it in a greased baking dish.
- Brush the top of the loaf with ketchup and drizzle olive oil over it.
- Bake for 50 to 60 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the meatloaf rest for 5 to 10 minutes before slicing and serving.
Notes
Serve with mashed potatoes and green beans for a comforting meal. Leftovers can be stored in the refrigerator for up to four days.
