- 1 lb salmon fillets
- 1/4 teaspoon salt
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup artichoke hearts, chopped
- 2 tablespoons capers, drained
- 5 oz fresh spinach
- 1 cup heavy cream
- 1/4 teaspoon paprika
Instructions
- Heat olive oil in a large skillet on medium-high heat.
- Season salmon with salt.
- Sear salmon fillets flesh side down for about 4 minutes.
- Reduce heat to medium and flip salmon; sear for another 4-5 minutes until flaky.
- Remove salmon from skillet and let it rest.
- In the same skillet, add sun-dried tomatoes, garlic, artichokes, and capers; cook for 1 minute.
- Add spinach and cook until wilted, about 2 minutes.
- Add heavy cream and paprika, bringing the mixture to a simmer for 1 minute.
- Add cooked salmon to skillet, spoon sauce over salmon, and simmer until warmed through.
- Season with additional salt if needed.
Notes
For a dairy-free option, substitute heavy cream with coconut cream or cashew cream.
