Description

Delightfully spooky chocolate sugar cookies for Halloween, perfect for family gatherings and kids in the neighborhood.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup Dutch-process cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1 1/2 sticks unsalted butter, at cool room temperature
  • 1 cup granulated sugar
  • 2 large eggs, at cool room temperature
  • 1 teaspoon pure vanilla extract
  • 4 ounces cream cheese, at room temperature
  • 4 tablespoons unsalted butter, at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups powdered sugar, sifted
  • A few drops of orange gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
  3. In a large bowl, beat the unsalted butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Gradually mix in the dry ingredients until a soft dough forms.
  6. Scoop tablespoons of dough onto the prepared baking sheets, spacing them apart. Lightly press them down to form discs.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are set. Let them cool completely on a wire rack.
  8. In a bowl, combine cream cheese and unsalted butter until smooth. Slowly add the sifted powdered sugar, mixing until combined and fluffy.
  9. Stir in additional vanilla extract and a few drops of orange food coloring until you reach your desired shade.
  10. Once the cookies are completely cooled, spread a generous layer of frosting on the bottom side of one cookie. Top it with another cookie, bottom side down, pressing gently to create a sandwich.
  11. Use additional frosting to create Jack-o’-Lantern faces on the top of the cookies!

Notes

Ensure butter is at cool room temperature for a creamy texture. Sift powdered sugar to avoid lumps in frosting.
