Delightfully spooky chocolate sugar cookies for Halloween, perfect for family gatherings and kids in the neighborhood.
Ingredients

- 2 1/2 cups all-purpose flour
- 1/2 cup Dutch-process cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
- 1 1/2 sticks unsalted butter, at cool room temperature
- 1 cup granulated sugar
- 2 large eggs, at cool room temperature
- 1 teaspoon pure vanilla extract
- 4 ounces cream cheese, at room temperature
- 4 tablespoons unsalted butter, at room temperature
- 2 teaspoons vanilla extract
- 1 1/2 cups powdered sugar, sifted
- A few drops of orange gel food coloring
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
- In a large bowl, beat the unsalted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Gradually mix in the dry ingredients until a soft dough forms.
- Scoop tablespoons of dough onto the prepared baking sheets, spacing them apart. Lightly press them down to form discs.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set. Let them cool completely on a wire rack.
- In a bowl, combine cream cheese and unsalted butter until smooth. Slowly add the sifted powdered sugar, mixing until combined and fluffy.
- Stir in additional vanilla extract and a few drops of orange food coloring until you reach your desired shade.
- Once the cookies are completely cooled, spread a generous layer of frosting on the bottom side of one cookie. Top it with another cookie, bottom side down, pressing gently to create a sandwich.
- Use additional frosting to create Jack-o’-Lantern faces on the top of the cookies!
Notes
Ensure butter is at cool room temperature for a creamy texture. Sift powdered sugar to avoid lumps in frosting.
