Ingredients

  • 1 lb shredded chicken
  • 3/4 cup yogurt-based tzatziki sauce
  • 1/4 cup plain Greek yogurt
  • 1 cup cherry tomatoes (sliced)
  • 1/3 cup red onion (diced)
  • 1 cup cucumber (diced)
  • 1/2 cup feta cheese (crumbled)
  • 1 tbsp Italian seasoning (or 1/2 tbsp dried oregano and 1/2 tbsp dried basil)
  • Salt and black pepper (to taste)
  • 1 lb boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Coat the chicken in olive oil and rub with garlic powder, salt, and pepper.
  3. Place chicken in a large glass dish and bake for 20-25 minutes until fully cooked (165°F).
  4. Allow to cool slightly, then shred the chicken.
  5. In a large bowl, combine the shredded chicken, tzatziki sauce, Greek yogurt, diced vegetables, and spices. Stir well to combine.

Notes

For added flavor, marinate the chicken in tzatziki sauce before baking. Serve with fresh herbs or toasted nuts for a crunchy texture.
