Ingredients

  • 1 lb shredded chicken
  • 3/4 cup yogurt-based tzatziki sauce
  • 1/4 cup plain Greek yogurt
  • 1 cup cherry tomatoes, sliced
  • 1/3 cup red onion, diced
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon Italian seasoning or 1/2 tablespoon dried oregano and 1/2 tablespoon dried basil
  • Salt and black pepper to taste
  • 1 lb boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Coat the chicken in olive oil, then rub it with garlic powder, salt, and black pepper.
  3. Place the chicken in a large glass dish and bake for 20-25 minutes until cooked through.
  4. Allow the chicken to cool slightly before shredding.
  5. In a large bowl, combine the shredded chicken with tzatziki sauce, Greek yogurt, cherry tomatoes, red onion, cucumber, feta cheese, and Italian seasoning; season with salt and black pepper to taste.
  6. Stir to combine and let the flavors mingle.
