- 1 lb shredded chicken
- 3/4 cup yogurt-based tzatziki sauce
- 1/4 cup plain Greek yogurt
- 1 cup cherry tomatoes, sliced
- 1/3 cup red onion, diced
- 1 cup cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1 tablespoon Italian seasoning or 1/2 tablespoon dried oregano and 1/2 tablespoon dried basil
- Salt and black pepper to taste
- 1 lb boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees F.
- Coat the chicken in olive oil, then rub it with garlic powder, salt, and black pepper.
- Place the chicken in a large glass dish and bake for 20-25 minutes until cooked through.
- Allow the chicken to cool slightly before shredding.
- In a large bowl, combine the shredded chicken with tzatziki sauce, Greek yogurt, cherry tomatoes, red onion, cucumber, feta cheese, and Italian seasoning; season with salt and black pepper to taste.
- Stir to combine and let the flavors mingle.
