Description

A refreshing Mediterranean salad with crisp cucumbers, tangy feta, fresh herbs, and a bright lemon-olive oil dressing. Ready in minutes and develops even better flavors as it sits.


Ingredients

  • 4 large English cucumbers, thinly sliced
  • 1 large red onion, thinly sliced
  • 1 cup crumbled feta cheese
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1/2 cup fresh dill, chopped
  • 1/2 cup fresh parsley, chopped
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and halved
  • 2 large tomatoes, cut into wedges (optional)

Instructions

  1. 1. Slice cucumbers into thin rounds and red onion into half-moons. Salt and let sit 15 minutes.
  2. 2. Whisk together olive oil, lemon juice, vinegar, garlic, and oregano for dressing.
  3. 3. Drain liquid from cucumber mixture and pat dry.
  4. 4. Combine drained vegetables with dressing in serving bowl.
  5. 5. Add feta, fresh herbs, olives, and tomatoes. Season with pepper.
  6. 6. Toss gently and let rest 30 minutes before serving.

Notes

Best consumed within 24 hours. Store covered in refrigerator up to 3 days. Drain excess liquid before storing.
