Description

Ingredients

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1/2 cup orzo or rice
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 lemon, zested
  • 1 cup spinach or kale
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat, then add onion, garlic, carrots, and celery, and sauté until softened.
  2. Add diced chicken and cook until browned.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in orzo or rice and cook until tender, about 10-12 minutes.
  5. Reduce heat and add lemon juice, lemon zest, and spinach or kale.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
