Ingredients

- 1 lb chicken breast, diced
- 4 cups chicken broth
- 1/2 cup orzo or rice
- 2 carrots, diced
- 1 celery stalk, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 lemon, zested
- 1 cup spinach or kale
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat, then add onion, garlic, carrots, and celery, and sauté until softened.
- Add diced chicken and cook until browned.
- Pour in chicken broth and bring to a boil.
- Stir in orzo or rice and cook until tender, about 10-12 minutes.
- Reduce heat and add lemon juice, lemon zest, and spinach or kale.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
