- 2 lbs Yukon gold potatoes, cut into wedges
- 3 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tsp oregano, dried or fresh
- 1 cup feta cheese, crumbled
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the Yukon gold potatoes into wedges and place them in a large bowl.
- Drizzle with olive oil and lemon juice; toss immediately.
- Add minced garlic and oregano, then toss until well coated.
- Spread the potatoes on a baking sheet in a single layer.
- Bake for 30-35 minutes, stirring halfway through, until golden and crispy.
- Fold in crumbled feta cheese just before serving.
Notes
For added crispiness, parboil the wedges before roasting. Adjust seasoning before baking for best flavor.
