Description

A vibrant and wholesome Greek Salad with marinated chicken, packed with fresh vegetables and a delicious homemade dressing.


Ingredients

  • 6 cups chopped lettuce (such as iceberg or romaine)
  • 1 8-ounce Greek Marinated Chicken Breast
  • 2 cups Mediterranean Tomato Salad or sliced tomatoes
  • 1 cup sliced Persian or hothouse cucumber
  • 1/4 cup kalamata olives
  • 1/4 cup feta cheese (broken into chunks)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 clove garlic (peeled and minced)
  • 2 teaspoons dried oregano
  • 1 teaspoon sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Add the lettuce to a large serving bowl.
  2. Top with sliced chicken, Mediterranean tomato salad, cucumber, kalamata olives, and feta cheese.
  3. In a small jar, combine olive oil, red wine vinegar, minced garlic, dried oregano, sugar, and both salts; shake to combine.
  4. Taste the dressing and adjust with more sugar and salt as needed.
  5. Drizzle the dressing over the salad and toss just before serving.

Notes

For optimal flavor and tenderness, marinate the chicken overnight. Store leftover salad without dressing for lasting freshness.
