Description

Delicious grilled chicken skewers marinated in a savory homemade BBQ sauce, perfect for family gatherings or summer barbecues.


Ingredients

  • 2 lb chicken tenders or boneless skinless breasts
  • Optional: 1 large broccoli head (cut into florets and steamed)
  • Optional: 3 cups of cooked rice of choice
  • 1 cup ketchup
  • 1/4 cup honey
  • 3 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 2 tbsp dry mustard
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Kosher salt (to taste)

Instructions

  1. In a medium bowl, whisk together the ketchup, honey, apple cider vinegar, Worcestershire sauce, dry mustard, smoked paprika, cayenne pepper, and a pinch of kosher salt. Reserve about 1/3 cup of this sauce for later.
  2. Cut the chicken into 1-inch pieces and add them to the bowl of BBQ sauce. Stir well to coat the chicken completely. Let it marinate for at least 30 minutes on the counter, or refrigerate overnight for more flavor.
  3. Thread the marinated chicken pieces onto bamboo skewers, making sure they’re packed tightly but not overcrowded.
  4. Preheat your grill pan over medium heat and grill the chicken skewers for about 4-5 minutes on each side, or until they’re beautifully charred and fully cooked through.
  5. Serve the skewers alongside cooked rice and steamed broccoli, with the reserved BBQ sauce for dipping.

Notes

For extra flavor, let the chicken marinate overnight. Use metal skewers if bamboo skewers are unavailable. Add colorful veggies for added nutrition.
