Description

Ingredients

  • 1 pound lean ground beef
  • 1/2 medium onion, chopped
  • 3 to 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon Italian seasoning
  • 1 cup uncooked orzo pasta
  • 1 (14 ounce) can tomato sauce
  • 3/4 cup beef broth
  • 1 cup heavy or whipping cream
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups fresh baby spinach, packed
  • Salt and pepper to taste

Instructions

  1. In a soup pot or Dutch oven, add the ground beef, breaking it up slightly. Cook for 5 to 6 minutes without stirring until browned.
  2. Add the chopped onion and cook for another 5 minutes, breaking the beef into smaller pieces.
  3. Stir in garlic, red pepper flakes, Italian seasoning, and orzo. Cook for about 1 minute until garlic is fragrant.
  4. Add tomato sauce, beef broth, cream, and Worcestershire sauce. Bring to a bubble and cook uncovered for 10 minutes, stirring frequently.
  5. Remove from heat, stir in parmesan and spinach, and cover for 3 to 5 minutes until thickened. Season with salt and pepper before serving.

Notes

For creamier sauce, consider using a mix of heavy cream and half-and-half. Customize with different greens like kale or swap out the orzo for a small pasta of your choice.
