- 1 pound lean ground beef
- 1/2 medium onion, chopped
- 3 to 4 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon Italian seasoning
- 1 cup uncooked orzo pasta
- 1 (14 ounce) can tomato sauce
- 3/4 cup beef broth
- 1 cup heavy or whipping cream
- 1 teaspoon Worcestershire sauce
- 1/2 cup freshly grated parmesan cheese
- 2 cups fresh baby spinach, packed
- Salt and pepper to taste
Instructions
- In a soup pot or Dutch oven, add the ground beef, breaking it up slightly. Cook for 5 to 6 minutes without stirring until browned.
- Add the chopped onion and cook for another 5 minutes, breaking the beef into smaller pieces.
- Stir in garlic, red pepper flakes, Italian seasoning, and orzo. Cook for about 1 minute until garlic is fragrant.
- Add tomato sauce, beef broth, cream, and Worcestershire sauce. Bring to a bubble and cook uncovered for 10 minutes, stirring frequently.
- Remove from heat, stir in parmesan and spinach, and cover for 3 to 5 minutes until thickened. Season with salt and pepper before serving.
Notes
For creamier sauce, consider using a mix of heavy cream and half-and-half. Customize with different greens like kale or swap out the orzo for a small pasta of your choice.
