Description

A vibrant and satisfying weeknight meal featuring ground beef, fresh vegetables, and creamy avocado, all in one bowl.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning (1.3 ounces)
  • 1/3 cup water
  • 1 tablespoon tomato paste
  • 2 red bell peppers, sliced
  • 1 red onion, sliced
  • 1 tablespoon olive oil
  • 2 cups cooked white rice
  • 1 1/2 cups corn
  • 2 cups chopped romaine lettuce
  • 1 avocado, sliced
  • 1 batch cilantro lime crema

Instructions

  1. Heat a large skillet over medium heat.
  2. Add the ground beef and sauté until cooked through, breaking it up for even browning.
  3. Mix in the tomato paste and sauté for 1 minute.
  4. Stir in the taco seasoning and water, reduce heat to low, and let simmer for a few minutes.
  5. In another skillet, heat olive oil over medium-high heat.
  6. Add sliced bell peppers and onions, sauté until soft, about 5-7 minutes.
  7. Assemble bowls starting with rice, layering with lettuce, taco beef, sautéed veggies, corn, avocado, and drizzle cilantro lime crema on top.

Notes

For variety, switch up the protein or veggies and serve with crispy tortilla chips.
