Description

Delicious and healthier churro bites that are easy to make and perfect for satisfying your sweet tooth.


Ingredients

Scale
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 tbsp melted coconut oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the whole wheat flour, baking powder, salt, and coconut sugar.
  3. In another bowl, combine the applesauce, almond milk, vanilla extract, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into mini muffin tins, filling each cup about 2/3 full.
  6. Bake for 15-18 minutes, or until the bites turn golden brown and a toothpick comes out clean.
  7. While baking, combine cinnamon and sugar in a small bowl.
  8. Once out of the oven, roll the warm churro bites in the cinnamon-sugar mixture.
  9. Let them cool slightly before serving.

Notes

Serve warm with Greek yogurt or drizzle with honey for added sweetness. Store leftovers in an airtight container at room temperature for up to three days, or freeze for up to a month.
