Description

Delightful cookies made with oats, chocolate chips, and nuts that offer a perfect balance of chewy and crisp texture.

Ingredients

Scale
  • 1 cup (2 sticks) butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 cups old-fashioned rolled oats
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and sugars together for 2-3 minutes until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add to wet ingredients, mixing until just combined.
  5. Fold in oats, chocolate chips, and pecans.
  6. Drop dough by tablespoonfuls onto prepared sheets, spacing them 2 inches apart.
  7. Bake for 10-12 minutes until edges are golden and centers look slightly underdone.
  8. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra chewiness, chill the dough for at least an hour before baking.
