Description

Ingredients

  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 6 slices bacon (diced)
  • 3 medium potatoes (peeled and diced)
  • 2 stalks celery (chopped)
  • 2 medium carrots (chopped)
  • 4 cups chicken broth
  • 2 chicken breasts (diced or sliced in half)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a Dutch oven or a deep soup pot, melt the butter over medium heat. Add the finely chopped onion and garlic and cook until softened.
  2. Add the diced bacon and cook until crispy.
  3. Stir in the diced potatoes and cook for 4 to 5 minutes.
  4. Add the chopped carrots and celery, sautéing for another 4 to 5 minutes until tender.
  5. Pour in the chicken broth and add the chicken pieces, salt, and pepper. Bring to a gentle boil, then reduce heat to a simmer.
  6. Cover and cook for about 15 minutes, or until the potatoes and carrots are tender, and the chicken is cooked through.

Notes

For extra creaminess, stir in cream or milk just before serving. Add herbs like thyme or rosemary for enhanced flavor.
