Description

A savory and protein-packed slow cooker pepper steak featuring tender beef, vibrant peppers, and rich flavors, perfect for weeknight dinners.


Ingredients

  • 2 lbs. beef strips
  • 1 green bell pepper, sliced thick
  • 1 red bell pepper, sliced thick
  • 1 white onion, sliced
  • 1/2 cup water
  • 2 beef bouillon cubes
  • 3 Tbsp. soy sauce
  • 1 tsp. Worcestershire sauce
  • 1/4 tsp. ground ginger
  • 1/4 tsp. garlic powder
  • 1/2 tsp. black pepper
  • 2 tsp. brown sugar
  • 1 Tbsp. cornstarch
  • 1/4 tsp. red pepper flakes (optional)

Instructions

  1. In a small microwavable bowl, combine the water and beef bouillon cubes. Microwave for 30 seconds, then mix until dissolved.
  2. Add soy sauce, Worcestershire sauce, ginger, garlic powder, black pepper, brown sugar, and cornstarch to the bowl and whisk until smooth.
  3. Pour this mixture into the slow cooker.
  4. Add beef strips, bell peppers, and onions into the sauce in the slow cooker.
  5. Cover and cook on LOW for 5 hours.
  6. Serve over white or brown rice, spaghetti noodles, or quinoa.

Notes

For deeper flavor, sear the beef strips before adding them to the slow cooker.
