Description

A delicious and easy Mushroom Pizza topped with fresh herbs, perfect for a weeknight dinner.


Ingredients

  • 1 ball Best Pizza Dough (or store-bought)
  • 1 1/2 cups sliced mixed mushrooms
  • 1 tablespoon finely chopped fresh thyme
  • 1 tablespoon finely chopped fresh oregano
  • 1/4 teaspoon kosher salt (plus a pinch for topping)
  • 1 tablespoon olive oil (plus more to drizzle on top)
  • 1 tablespoon fresh lemon juice
  • 1 to 2 ounces goat cheese, crumbled
  • 3/4 cup shredded mozzarella cheese
  • 1 to 2 tablespoons finely chopped chives
  • Semolina flour or cornmeal, for dusting the pizza peel

Instructions

  1. Make the pizza dough by following the Best Pizza Dough recipe, which takes about 15 minutes to prepare and 45 minutes to rest.
  2. Preheat your oven to 500 degrees F with a pizza stone inside OR preheat your pizza oven.
  3. Clean and slice the mushrooms into even pieces.
  4. In a skillet, heat olive oil over medium-high heat, then add mushrooms, chopped herbs, and kosher salt. Cook for about 5 minutes until tender.
  5. Reduce heat to low, add lemon juice, and remove from heat.
  6. Dust a pizza peel with semolina flour or cornmeal.
  7. Stretch the dough into a circle and place it on the pizza peel.
  8. Brush the crust with olive oil and top with mozzarella cheese, cooked mushrooms, goat cheese, chives, and thyme.
  9. Transfer the pizza onto the preheated pizza stone and bake for 5 to 7 minutes, or 1 minute in a pizza oven.
  10. Slice and serve immediately.

Notes

This pizza pairs well with a light salad or roasted vegetables and can be stored in the fridge for up to 3 days.
