A delicious and easy Mushroom Pizza topped with fresh herbs, perfect for a weeknight dinner.

- 1 ball Best Pizza Dough (or store-bought)
- 1 1/2 cups sliced mixed mushrooms
- 1 tablespoon finely chopped fresh thyme
- 1 tablespoon finely chopped fresh oregano
- 1/4 teaspoon kosher salt (plus a pinch for topping)
- 1 tablespoon olive oil (plus more to drizzle on top)
- 1 tablespoon fresh lemon juice
- 1 to 2 ounces goat cheese, crumbled
- 3/4 cup shredded mozzarella cheese
- 1 to 2 tablespoons finely chopped chives
- Semolina flour or cornmeal, for dusting the pizza peel
Instructions
- Make the pizza dough by following the Best Pizza Dough recipe, which takes about 15 minutes to prepare and 45 minutes to rest.
- Preheat your oven to 500 degrees F with a pizza stone inside OR preheat your pizza oven.
- Clean and slice the mushrooms into even pieces.
- In a skillet, heat olive oil over medium-high heat, then add mushrooms, chopped herbs, and kosher salt. Cook for about 5 minutes until tender.
- Reduce heat to low, add lemon juice, and remove from heat.
- Dust a pizza peel with semolina flour or cornmeal.
- Stretch the dough into a circle and place it on the pizza peel.
- Brush the crust with olive oil and top with mozzarella cheese, cooked mushrooms, goat cheese, chives, and thyme.
- Transfer the pizza onto the preheated pizza stone and bake for 5 to 7 minutes, or 1 minute in a pizza oven.
- Slice and serve immediately.
Notes
This pizza pairs well with a light salad or roasted vegetables and can be stored in the fridge for up to 3 days.
